Food is a massive part
of my life, like anyone else. I made a life changing decision about 4 years
ago. I have never really been someone that craves meat, I was brought up with
it and just thought it was something we’re suppose to eat. I casually had meat every
day but there was a point in my life where I questioned if I should eat it,
admittedly I felt guilty but never changed. Then one day I did make that
change, pretty drastically actually, the one day I ate meat then the next I
completely stopped. I’ve never looked back since and I can say that it was the
best decision I have made.
Since being vegetarian
I have discovered food that I would have never known the name of before. It’s
opened my eyes to all sorts of interesting alternatives. It’s made me want to
learn, want to discover and have interesting meals.
Even more recently, I
have stumbled upon some really interesting Instagram posts. #RawFood is a
really popular thing and it’s motivated me to eat more veg and fruit. Try typing the hastag into Instagram
and see the beautiful and inspiring lives people lead.
Anyway, today I
thought I would share a meal post with you. Jacket Potato and Quorn Mince with
vegetables. I love jacket potato, I cook mine in the microwave for 9/10 minutes
(depending on size) and then lightly coat the potato in olive oil and salt / pepper then pop it in the
oven for 10 minutes. It makes the skin so tasty and crisp without having to
spend 1 hr 30 mins in the oven drying out. I tossed some Quorn Mince in the pan
with red onion, pepper and halved baby tomatoes - then sprinkle a dab of sunflower oil and cook for 10
minutes. On the side I had some avocado, I’m crazy about this little vegetable
and I only discovered it 2 weeks ago!
