So, I really wanted to recreate on of my favourite sandwiches in a vegan friendly way. I use Violife cheese, which I have never used before (so I was pretty nervous), dairy free pesto and cherry tomatoes sandwiched between two slices of wholemeal bread.




First I toasted one side of each slice under the grill. Once heated I smoothed one of the toasted sides with vegan pesto, topped with Violife cheese then the tomatoes.



Once all together I toasted each side in the grill. I know that these Violife cheese slices don't melt so instead of using a sandwich presser to smush it all together, I decided to toast in the grill so it was nice and warm :)



I'm trying to lead a vegetarian / vegan lifestyle cheaply, and below I've deconstructed the ingredients to come up with the total price of this sandwich!


Kingsmill 50/50 bread (priced 0.85p a loaf) - around 9p for 2 slices
Violife cheese slices (priced £2.49) in a 10 pack - 50p for 2 slices
Organic dairy free pesto (priced £2) - around 20p
